Ingredients:

• 3-4 large russet potatoes
• 2-3 large carrots
• 1 medium onion
• 2 tablespoons of oil

Making the creamy sauce mixture

The creamy sauce is what makes this slow cooker creamy chicken and potatoes truly divine. It’s rich and flavorful, yet easy to prepare.

Ingredients for the sauce:

• 2 cans of cream of chicken soup (you can use a low-fat version if desired)
• 1 cup of chicken broth (choose a low-sodium option for better control over salt)
• 1 cup of sour cream or Greek yogurt for added creaminess
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• Salt and pepper to taste
• Chopped fresh herbs (like parsley or thyme) for garnish

Instructions:

1. In a medium bowl, whisk together the cream of chicken soup, chicken broth, sour cream, garlic powder, and onion powder.
2. Season with salt and pepper.
3. Pro tip: Taste-test your mixture before adding it to your slow cooker for adjustments!

Layering the ingredients in the slow cooker

Now that we have delicious ingredients prepared, it’s time to layer them in the slow cooker for optimal flavor absorption.

Steps:

1. Start by placing the chopped potatoes and carrots at the bottom of the slow cooker.
2. Add the cubed chicken on top of the vegetables—this will ensure the bird stays moist during cooking.
3. Pour the creamy sauce mixture over everything.
4. Give it a gentle stir to combine all the flavors, if desired.
5. Reminder: You can add turkey bacon or chicken ham at this stage for extra flavor!

Cooking to perfection

Plug in your slow cooker and set it to work! For the best results:

1. Cook on low for about 6-7 hours or on high for 3-4 hours.
2. Remember, cooking times may vary based on your slow cooker model, so check on your meal occasionally.

Shredding the chicken and finishing the sauce

After the cooking time is complete, it's time to unleash the deliciousness.

1. Open the lid and take a moment to enjoy the heavenly aroma.
2. Using two forks, gently shred the chicken right in the slow cooker.
3. Mix everything together thoroughly—the sauce will become beautifully creamy and thick.

Cooking Tips and Notes for Slow Cooker Creamy Chicken and Potatoes

Choosing the Right Slow Cooker Settings

When making slow cooker creamy chicken and potatoes, the settings you choose can greatly affect the outcome. Generally, the low setting allows for a slow, even cook that enhances flavors and results in tender meat. If you're short on time, though, the high setting works well but can create a slightly different texture. Aim for 6-8 hours on low for the juiciest chicken!

How to Ensure Chicken Stays Moist and Tender

To keep your chicken from drying out, consider these tips:

• Use skinless, boneless chicken thighs: They are more forgiving than breasts and stay moist during the lengthy cooking time.
• Add moisture: Using low-sodium chicken broth or a creamy soup can prevent your chicken from becoming too dry.
• Seal it in: Remember to avoid frequent opening of the slow cooker; every time the lid is lifted, heat escapes.
