Gather Your Ingredients

Before you get into the cooking groove, having all your ingredients at hand is key. Here’s what you’ll need:

• 2 cups shredded cooked chicken (or chicken ham if you prefer)
• 8-10 small corn tortillas
• 1 can (15 oz) black beans, rinsed and drained
• 1 cup corn (fresh, frozen, or canned)
• 2 cups shredded cheese (cheddar or a blend is ideal)
• 1 can (10 oz) enchilada sauce
• 1 cup salsa
• 1 medium onion, finely chopped
• 2 cloves garlic, minced
• 1 tablespoon olive oil
• Spices: cumin, chili powder, salt, and pepper

Feel free to mix things up with additional ingredients like peppers or jalapeños for an extra kick!

Preheat and Prepare Your Baking Dish

Kick off your cooking with some preliminary prep work. First, preheat your oven to 350°F (175°C). This will ensure your casserole cooks evenly and comes out perfectly bubbly. While the oven warms up, grab a suitable baking dish—an 8x8 inch or 9x13 inch dish usually works well. Lightly grease it with cooking spray or a bit of olive oil to prevent sticking and to add flavor.

Sauté the Aromatics

Next up, let’s build some flavor. In a sauté pan, heat a tablespoon of olive oil over medium heat. Add the finely chopped onion and cook for about 5 minutes until it softens and becomes translucent. Stir in the minced garlic and cook for another minute until fragrant. This step is crucial—it’s where your dish starts to sing! Aromatics transform a simple casserole into a culinary masterpiece.

Make the Cheesy Chicken Sauce

In a large mixing bowl, combine the shredded chicken (or chicken ham), black beans, corn, half of the shredded cheese, and the sautéed onion and garlic. Then, pour in the enchilada sauce and salsa. Mix everything until evenly combined. If you’re looking to amp up the flavor, don’t forget to season with cumin, chili powder, salt, and pepper. Taste as you go; remember, this is your masterpiece!

Layer the Ingredients

Now, it’s assembly time! Start with a layer of tortillas at the bottom of the baking dish, tearing them if needed to fit. Spoon half of the cheesy chicken mixture over the tortillas. Repeat with another layer of tortillas followed by the remaining cheesy chicken mixture. Top it all off with the rest of the shredded cheese. This will create a beautifully layered cheesy chicken tortilla casserole that is sure to impress.

Bake Your Casserole

Pop your dish into the preheated oven and let it bake for about 25 to 30 minutes, or until the cheese is bubbly and golden. The aroma that fills your kitchen will make your stomach growl!

Rest and Serve

Once it’s out of the oven, let your cheesy chicken tortilla casserole sit for about 5-10 minutes before serving. This resting period helps the layers set, making it easier to cut and serve. Offer toppings like chopped cilantro, avocado, or a dollop of sour cream to personalize each plate.

There you have it—a delicious, cheesy chicken tortilla casserole that combines comfort and convenience! Serve it up and enjoy the smiles around the table. For more culinary inspiration, check out reliable sources like EatingWell or Bon Appétit for tips and variations! Happy cooking!

If you like it spicy, throw in some diced jalapeños or a pinch of cayenne pepper. Fresh cilantro as a garnish can also brighten the dish.

Trouble-shooting Common Issues
