Turkey Bacon Pea Salad

A refreshing salad that combines the flavors of turkey bacon and peas.

Ingredients

  • 4 slices turkey bacon
  • 2 cups fresh peas
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the turkey bacon in a skillet until crispy. Remove and chop into pieces.
  2. In a large bowl, combine fresh peas, cherry tomatoes, red onion, and parsley.
  3. Add in the chopped turkey bacon.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Serve immediately or refrigerate for an hour before serving to let the flavors meld.

Notes
