  • 4 boneless chicken thighs
  • 1 cup pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine olive oil, soy sauce, brown sugar, garlic, ginger, salt, and pepper.
  3. Add the chicken thighs to the bowl and coat them in the marinade.
  4. On a baking sheet, arrange the marinated chicken, pineapple, bell peppers, and onion.
  5. Bake for 25-30 minutes or until the chicken is cooked through.
  6. Serve hot and enjoy!
