Teriyaki Chicken Veggie Rice Bake

A delicious blend of teriyaki chicken and fresh vegetables over a bed of rice, perfect for a cozy dinner.

  • 1 pound boneless chicken thighs
  • 1 cup bell peppers, chopped
  • 1 cup broccoli florets
  • 1/4 cup teriyaki sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons green onions, sliced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat sesame oil and sauté garlic and ginger until fragrant.
  3. Add the chicken thighs, cooking until browned and cooked through.
  4. Stir in bell peppers, broccoli, and teriyaki sauce, cooking for an additional 5 minutes.
  5. In a large baking dish, layer the cooked rice, followed by the chicken and veggie mixture.
  6. Top with sliced green onions.
  7. Bake in the preheated oven for 20-25 minutes.
  8. Remove from oven and let cool for a few minutes before serving.
