Tender Oven Baked Beef and Potatoes in Gravy

  • 2 pounds chuck roast
  • 4 medium potatoes
  • 2 cups beef broth
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Season the chuck roast with salt and pepper, then heat olive oil in a large skillet and brown the meat on all sides.
  3. Transfer the roast to a large baking dish, and add chopped onions, minced garlic, and potatoes around it.
  4. Pour beef broth and Worcestershire sauce over the meat and vegetables.
  5. Sprinkle dried thyme over the top.
  6. Cover with foil and bake for 3 hours or until the beef is tender.
  7. Remove from the oven, let it rest for a few minutes, then slice and serve with gravy.
