  • 4 medium potatoes, sliced
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1 cup shredded cheese
  • 1 cup corn
  • 1 cup beef broth
  • 1 small onion, diced
  • 1 tablespoon garlic, minced

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  2. In a crockpot, layer the sliced potatoes, then add the browned beef.
  3. Sprinkle the taco seasoning over the beef and potatoes.
  4. Add diced tomatoes, corn, beef broth, onion, and garlic.
  5. Cover and cook on low for 6-8 hours or until the potatoes are tender.
  6. Top with shredded cheese during the last 30 minutes of cooking.
