Spinach and Cheese Cannelloni

  • 9 cannelloni pasta tubes
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the cannelloni pasta tubes in boiling water for 5 minutes, then drain and cool.
  3. In a mixing bowl, combine spinach, ricotta, mozzarella, Parmesan, egg, garlic powder, salt, and pepper.
  4. Stuff the cannelloni tubes with the cheese and spinach mixture.
  5. Spread half of the marinara sauce on the bottom of a baking dish.
  6. Place the stuffed cannelloni on top of the sauce, then pour the remaining sauce over the top.
  7. Cover with foil and bake for 25 minutes, remove foil and bake for an additional 10 minutes.
  8. Let it cool for a few minutes before serving.

Notes

  • For added flavor, sprinkle some Italian herbs on top before baking.
  • This dish can be made ahead of time and stored in the fridge.
