Southwestern Chicken Wraps

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 cup diced tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ¼ teaspoon salt
  • 4 large tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, sliced
  • ¼ cup fresh cilantro, chopped

Instructions

  1. In a large bowl, combine the shredded chicken, black beans, corn, diced tomatoes, chili powder, cumin, and salt. Mix well.
  2. Place a tortilla on a clean surface and add a portion of the chicken mixture in the center.
  3. Top with cheese, avocado slices, and chopped cilantro.
  4. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom.
  5. Repeat with remaining tortillas and filling.
  6. Serve with your favorite dipping sauce.
