A delicious Southwest Chicken Salad with a twist of turkey bacon for added flavor and crunch.

Ingredients

  • 2 cups cooked chicken, diced
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, canned or fresh
  • 1 cup black beans, rinsed
  • 1 avocado, diced
  • 1/4 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt to taste

Instructions

  1. In a large bowl, combine chicken, turkey bacon, tomatoes, corn, black beans, avocado, red onion, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, cumin, and salt.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or chill for 30 minutes before serving.
