  • 2 cups onions, sliced
  • 1 cup beef broth
  • 1 cup Swiss cheese, grated
  • 2 tablespoons olive oil
  • 1 tablespoon thyme, fresh or dried
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced onions and cook until caramelized, about 15 minutes.
  3. Push the onions to the side of the skillet and add chicken breasts.
  4. Cook the chicken for about 6 minutes per side, until golden brown.
  5. Pour in beef broth and sprinkle thyme, salt, and pepper over the chicken.
  6. Cover the skillet and let it simmer for 10-15 minutes.
  7. Top with Swiss cheese and cover until the cheese melts.
