Smoked Beef Sausage and Potato Bake

A delicious and hearty dish perfect for colder weather that combines the richness of smoked beef sausage with the comforting taste of potatoes.

  • 1 pound smoked beef sausage
  • 2 pounds potatoes, diced
  • 1 onion, chopped
  • 3 cups bell peppers, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the diced potatoes, chopped onion, and sliced bell peppers.
  3. Drizzle with olive oil and season with garlic powder, paprika, salt, and pepper. Toss to coat evenly.
  4. Transfer the vegetable mixture to a large baking dish.
  5. Slice the smoked beef sausage and layer it on top of the vegetables.
  6. Cover the dish with aluminum foil and bake for 45 minutes.
  7. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the sausage is browned.
  8. Allow to cool for a few minutes before serving.
