- 3 pounds beef chuck roast
- 1 tablespoon olive oil
- 2 onions, sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1/4 cup tomato paste
- 2 tablespoons Worcestershire sauce
- 1 tablespoon brown sugar
- 2 teaspoons smoked paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Heat olive oil in a skillet over medium heat. Sear the beef roast on all sides until browned.
- Place the sliced onions and minced garlic in the slow cooker.
- Put the seared beef chuck on top of the onions and garlic.
- In a bowl, mix the beef broth, tomato paste, Worcestershire sauce, brown sugar, smoked paprika, cumin, salt, and pepper.
- Pour the mixture over the beef in the slow cooker.
- Cover and cook on low for 8 hours or until the beef is tender and easily shredded.
- Remove the beef, shred it with two forks, and return it to the sauce. Stir to combine.
