  • 3 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 2 onions, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/4 cup tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar
  • 2 teaspoons smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a skillet over medium heat. Sear the beef roast on all sides until browned.
  2. Place the sliced onions and minced garlic in the slow cooker.
  3. Put the seared beef chuck on top of the onions and garlic.
  4. In a bowl, mix the beef broth, tomato paste, Worcestershire sauce, brown sugar, smoked paprika, cumin, salt, and pepper.
  5. Pour the mixture over the beef in the slow cooker.
  6. Cover and cook on low for 8 hours or until the beef is tender and easily shredded.
  7. Remove the beef, shred it with two forks, and return it to the sauce. Stir to combine.
  8. Serve hot with desired sides.
