Slow Cooker Stuffed Pepper Meatloaf

A delicious and hearty meal that combines classic meatloaf with the flavors of stuffed peppers, all made effortlessly in your slow cooker.

  • 1 pound ground beef
  • 1 bell pepper, diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce
  • 1/2 cup shredded cheese

Instructions

  1. In a large mixing bowl, combine the ground beef, diced bell pepper, chopped onion, garlic, breadcrumbs, egg, salt, and black pepper.
  2. Mix until well combined and form into a loaf shape.
  3. Place the meatloaf in the slow cooker and pour the marinara sauce over the top.
  4. Cover and cook on low for 6-8 hours or until the meatloaf is cooked through.
  5. In the last 30 minutes of cooking, sprinkle the shredded cheese on top and cover until melted.
  6. Serve warm with sides of your choice.
