- 1 pound turkey bacon
- 1 cup diced onion
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 4 cups broth (chicken or vegetable)
- 1 teaspoon dried thyme
- 1 teaspoon Italian seasoning
- 8 ounces small pasta (like ditalini)
- Salt and pepper to taste
- In a slow cooker, add the turkey bacon and cook until crispy. Remove, crumble, and set aside.
- Add onions, garlic, carrots, and celery to the slow cooker; sauté until softened.
- Stir in cannellini beans, diced tomatoes, broth, thyme, and Italian seasoning.
- Cover and cook on low for 6-8 hours.
- During the last 30 minutes, add pasta and let it cook until tender.
- Return crumbled turkey bacon and stir well before serving.
Notes
