Slow Cooker Garlic Onion Beef Roast

  • 3 pounds beef roast
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a skillet over medium heat. Sear the beef roast on all sides until browned. Remove from heat.
  2. Place sliced onion and minced garlic in the slow cooker.
  3. Add the beef roast on top of the onions and garlic.
  4. Pour in the beef broth and sprinkle with thyme, salt, and pepper.
  5. Cover and cook on low for 8 hours or high for 4 hours until the meat is tender.
  6. Shred the meat and serve with the onions and broth.
