Slow Cooker Cheesy Ranch Beef and Potatoes

Ingredients

  • 2 pounds beef chuck roast
  • 1 pound baby red potatoes
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup beef broth
  • 1 onion, diced
  • 4 cloves garlic, minced

Instructions

  1. Place the beef roast in the slow cooker.
  2. Add the diced onions and minced garlic on top of the meat.
  3. Cut the potatoes in half and add them to the slow cooker.
  4. Sprinkle the ranch seasoning mix over the top.
  5. Pour the beef broth into the slow cooker.
  6. Cover and cook on low for 8 hours or high for 4 hours.
  7. About 15 minutes before serving, sprinkle shredded cheddar cheese over the top and cover until melted.

Notes

  • For extra flavor, sear the beef chuck roast in a hot skillet before placing it in the slow cooker.
  • You can substitute the baby red potatoes with Yukon gold if preferred.
