Slow Cooker Beef Stew with Tender Beef

A comforting and hearty slow cooker beef stew made with tender beef and rich flavorful herbs.

  • 2 pounds beef chuck, cut into cubes
  • 4 cups beef broth
  • 3 cups potatoes, diced
  • 2 cups carrots, sliced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 tablespoons Worcestershire sauce
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a slow cooker, add the beef cubes and season with salt and pepper.
  2. Add the diced potatoes, sliced carrots, chopped onion, and minced garlic.
  3. In a separate bowl, mix the beef broth, tomato paste, Worcestershire sauce, thyme, and rosemary and pour over the ingredients in the slow cooker.
  4. Stir everything together to ensure the meat and vegetables are well coated.
  5. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and the vegetables are cooked through.
  6. Adjust seasoning before serving, and enjoy your hearty stew!

Notes

  • For a thicker stew, you can add a cornstarch slurry at the end of the cooking time.
  • Feel free to add other vegetables such as peas or celery for variety.
