Slow Cooker Beef and Potato Au Gratin

  • 2 pounds beef chuck, cut into cubes
  • 4 large potatoes, thinly sliced
  • 2 cups shredded cheddar cheese
  • 1 cup beef broth
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Brown the beef cubes on all sides and then transfer them to the slow cooker.
  2. Layer half of the sliced potatoes over the beef, followed by half of the onions and garlic, then sprinkle with half of the cheese.
  3. Repeat the layers with the remaining potatoes, onions, garlic, and finish with the remaining cheese.
  4. Pour the beef broth over the layers and season with thyme, salt, and pepper.
  5. Cover and cook on low for 6-8 hours or on high for 4-5 hours until the beef and potatoes are tender.

Notes

  • For extra flavor, you can add some herbs like rosemary or parsley.
  • Let the dish sit for a few minutes before serving to allow it to set.
