Slow Cooker Beef and Cabbage Stew

A hearty and comforting slow cooker beef and cabbage stew, perfect for chilly evenings.

Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 1 small head green cabbage, chopped
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 6 cups beef broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 1 teaspoon black pepper
  • 2 tablespoons Worcestershire sauce

Instructions

  1. In a slow cooker, combine the beef, cabbage, carrots, and potatoes.
  2. Pour in the beef broth and stir in the onion, garlic, thyme, black pepper, and Worcestershire sauce.
  3. Cover and cook on low for 8 hours, or until the beef is tender.
  4. Before serving, taste and adjust seasoning as needed.

Notes

  • This stew can also be made with a variety of vegetables, such as celery or bell peppers.
  • For thicker stew, you can mash a few potatoes against the side of the pot.
