Simple Southern Potato Salad

  • 4 eggs
  • 1 cup mayonnaise
  • 2 tablespoons mustard
  • 1 cup celery, diced
  • 1 cup green onions, chopped
  • 1/2 cup turkey bacon, cooked and crumbled
  • salt to taste
  • black pepper to taste

Instructions

  1. Boil the potatoes until tender, then cool and dice.
  2. Hard boil the eggs, then peel and chop them.
  3. In a large bowl, mix together the mayonnaise, mustard, celery, green onions, and turkey bacon.
  4. Add the diced potatoes and chopped eggs, then season with salt and pepper.
  5. Stir gently until everything is well combined.
  6. Refrigerate for at least 2 hours before serving.

Notes

  • For a creamier salad, add more mayonnaise.
  • Feel free to substitute regular bacon if preferred.
