- 4 large baking potatoes
- 1 pound shrimp, peeled and deveined
- 1 cup creamy cheddar cheese, shredded
- 1/2 cup sour cream
- 1/4 cup green onions, sliced
- 2 tablespoons butter
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt to taste
- Pepper to taste
- Preheat the oven to 400°F (200°C).
- Wash the potatoes and pierce them with a fork. Bake for about 45-60 minutes until tender.
- In a skillet, melt butter and sauté shrimp until pink, about 3-4 minutes. Add garlic powder, paprika, salt, and pepper.
- Once the potatoes are done, let them cool slightly. Cut them in half and scoop out the insides, mixing the potato flesh with sour cream, cheddar cheese, and green onions.
- Fold in the cooked shrimp, then scoop the mixture back into the potato skins.
- Top with additional cheddar cheese and bake for another 10-15 minutes until cheese is bubbly.
Notes
