- 1 pound shrimp, peeled and deveined
- 1 pound crab meat
- 1/2 pound turkey bacon, chopped
- 1 onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups seafood stock
- 2 tablespoons Cajun seasoning
- 1/4 cup vegetable oil
- 1/4 cup all-purpose flour
- 2 bay leaves
- 1 can diced tomatoes
- 2 cups okra, sliced
- Salt to taste
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add vegetable oil and flour to make a roux. Cook until it’s a dark brown color.
- Add the onion, bell pepper, celery, and garlic to the roux and sauté until softened.
- Stir in the Cajun seasoning, bay leaves, and diced tomatoes. Cook for a few minutes.
- Pour in the seafood stock and bring to a boil. Reduce heat and let simmer.
- Add the okra, shrimp, and crab meat. Cook until the shrimp is pink.
- Stir in the cooked turkey bacon, adjust seasoning with salt, and serve hot.
Notes
- For more flavor, let the gumbo sit overnight in the refrigerator and reheat before serving.
