  • 1 pound ground beef
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 2 cups shredded cheese
  • 8 corn tortillas
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook ground beef over medium heat until browned. Drain any excess fat.
  3. Add onions and garlic, cooking until softened.
  4. Stir in 1/2 cup of enchilada sauce, cumin, chili powder, salt, and pepper.
  5. In a baking dish, spread a little enchilada sauce on the bottom.
  6. Fill each tortilla with a portion of the beef mixture and some cheese, then roll up and place seam-side down in the dish.
  7. Top with remaining enchilada sauce and sprinkle with remaining cheese.
  8. Bake for about 20 minutes, until cheese is melted and bubbly.
  9. Let cool for a few minutes before serving.
