  • 1 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups mixed red fruits (strawberries, raspberries, cherries)
  • 1/4 cup fruit compote (optional)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In another bowl, beat the cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing until fully incorporated.
  4. Pour the cream cheese mixture over the crust and bake for 50-60 minutes, or until set.
  5. Cool the cheesecake in the pan, then refrigerate for at least 4 hours.
  6. Top with mixed red fruits and fruit compote before serving.
