- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 can (15 oz) pumpkin puree
- 3/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 3 large eggs
- 1 cup evaporated milk
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a bowl, mix flour, granulated sugar, and softened butter until crumbly. Press into the bottom of the prepared dish.
- In another bowl, combine pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, salt, eggs, and evaporated milk. Mix well.
- Pour the pumpkin filling over the crust.
- Bake for 40-45 minutes or until a knife comes out clean from the center.
- Let cool before slicing into bars and serving.
