- 2 cups mashed potatoes
- 1 cup chicken ham, diced
- 1 cup mozzarella cheese, shredded
- 1/4 cup fresh herbs, chopped (parsley, basil)
- 1/2 cup breadcrumbs
- 2 eggs, beaten
- Salt and pepper to taste
- Preheat the oven to 375°F (190°C).
- In a bowl, combine the mashed potatoes, chicken ham, mozzarella, and fresh herbs.
- Season with salt and pepper.
- Form the mixture into small balls.
- Dip each ball in the beaten eggs, then roll in breadcrumbs.
- Place the balls on a baking sheet.
