2 cups fresh peaches, diced
1 cup sugar
1 teaspoon cinnamon
1 tablespoon cornstarch
10 egg roll wrappers
oil for frying
1 cup whipped cream (optional)
Instructions
In a medium bowl, combine diced peaches, sugar, cinnamon, and cornstarch.
Place about 2 tablespoons of the peach mixture in the center of each egg roll wrapper.
Fold the edges of the wrapper and seal them with a little water.
Heat oil in a frying pan over medium heat.
Fry the egg rolls until they’re golden brown on both sides.
Remove and drain on paper towels.
Serve warm with whipped cream.
Notes
For added crunch, you can sprinkle sugar on top of the egg rolls before frying.
