  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 can (15 ounces) kidney beans, rinsed and drained
  • 1 can (15 ounces) cannellini beans, rinsed and drained
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup small pasta, such as ditalini

Instructions

  1. In a large pot over medium heat, brown the ground beef until cooked through.
  2. Add onion, garlic, carrots, and celery; sauté until vegetables are tender.
  3. Stir in kidney beans, cannellini beans, crushed tomatoes, beef broth, oregano, basil, salt, and pepper.
  4. Bring to a boil, then reduce heat and let simmer for 30 minutes.
  5. Stir in the pasta and cook until al dente, following package instructions.
  6. Serve hot, garnished with grated cheese if desired.
