No-Bake 4th of July Cherry Icebox Cake

Celebrate summer with this easy and indulgent No-Bake 4th of July Cherry Icebox Cake that brings festive flavors to your table.

Ingredients

  • 2 cups graham crackers, crushed
  • 1 cup unsalted butter, melted
  • 1 cup powdered sugar
  • 8 oz cream cheese, softened
  • 2 cups heavy whipping cream
  • 1 cup cherry pie filling

Instructions

  1. In a bowl, combine crushed graham crackers and melted butter, then press into the bottom of a 9×13 inch pan.
  2. In another bowl, beat together powdered sugar and cream cheese until smooth.
  3. In a separate bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  4. Spread half of the whipped cream mixture over the graham cracker crust.
  5. Add a layer of cherry pie filling on top of the cream mixture.
  6. Repeat the layers with the remaining graham cracker crust, cream mixture, and cherry pie filling.
  7. Refrigerate for at least 4 hours or until set before serving.

Notes

  • For best results, let the cake chill overnight.
  • Feel free to top with extra cherries before serving.
