  • 1 package chocolate sandwich cookies
  • 1/2 cup unsalted butter, melted
  • 2 cups heavy whipping cream
  • 1 cup powdered sugar
  • 1 teaspoon mint extract
  • 1 cup mini chocolate chips
  • 1 cup whipped topping

Instructions

  1. In a mixing bowl, combine crushed chocolate cookies and melted butter until well mixed.
  2. Press the mixture into the bottom of a 9×13 inch pan.
  3. In another bowl, whip the cream until soft peaks form.
  4. Add powdered sugar and mint extract, then mix until stiff peaks form.
  5. Fold in mini chocolate chips and whipped topping gently.
  6. Spread half of the mint cream mixture over the cookie crust.
  7. Repeat layering with remaining crust and cream mixture.
  8. Chill in the refrigerator for at least 4 hours or overnight before serving.
