  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottoms of muffin tins.
  3. In a large mixing bowl, beat the cream cheese until smooth. Add in the sugar and vanilla extract, and mix until combined.
  4. Incorporate the eggs, one at a time, mixing well after each addition.
  5. Stir in the sour cream until the mixture is creamy.
  6. Pour the cheesecake batter over the crusts in the muffin tins.
  7. Bake for 20-25 minutes or until set. Allow to cool before serving.
