- 1 pound shrimp, peeled and deveined
- 1 pound andouille sausage, sliced
- 1 cup bell pepper, chopped
- 1 cup onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups long-grain rice
- 1 tablespoon Cajun seasoning
- 1 teaspoon thyme
- 1 can diced tomatoes, drained
- 2 tablespoons olive oil
- In a large pot, heat olive oil over medium heat and sauté the sausage until browned.
- Add the chopped onion, bell pepper, and garlic, cooking until softened.
- Stir in the Cajun seasoning, thyme, and diced tomatoes.
- Add the rice and chicken broth, bringing to a boil.
- Reduce heat and simmer until rice is cooked.
- Stir in the shrimp and cook until pink and cooked through.
- Season with salt and pepper to taste. Serve hot.
