Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound andouille sausage, sliced
  • 1 cup bell pepper, chopped
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups long-grain rice
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon thyme
  • 1 can diced tomatoes, drained
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté the sausage until browned.
  2. Add the chopped onion, bell pepper, and garlic, cooking until softened.
  3. Stir in the Cajun seasoning, thyme, and diced tomatoes.
  4. Add the rice and chicken broth, bringing to a boil.
  5. Reduce heat and simmer until rice is cooked.
  6. Stir in the shrimp and cook until pink and cooked through.
  7. Season with salt and pepper to taste. Serve hot.

Notes

  • For extra spice, add chopped jalapeños.
  • Can be made in a slow cooker for convenience.
