  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1 cup small pasta (like elbow macaroni)
  • 2 cups spinach, chopped
  • 1 lemon, juiced

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the turkey bacon and cook until crispy. Remove and set aside.
  3. In the same pot, add the chicken breasts and sauté until golden brown on both sides.
  4. Add the onion, carrots, celery, and garlic; cook until the vegetables are soft.
  5. Pour in the chicken broth, then add the thyme, oregano, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 15 minutes.
  7. Remove the chicken, shred it, and return it to the pot.
  8. Add the pasta and cook until al dente.
  9. Stir in the spinach and lemon juice just before serving.
  10. Serve hot, garnished with crispy turkey bacon.

Notes

  • For added flavor, use homemade chicken broth.
  • Feel free to substitute any vegetables you have on hand.
