High Protein Turkey Stuffed Zucchini Boats

A delicious and healthy recipe for turkey stuffed zucchini boats packed with protein.

Ingredients

  • 4 medium zucchini
  • 1 pound ground turkey
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the insides.
  3. In a skillet, cook the onion and garlic until soft.
  4. Add the ground turkey and cook until browned.
  5. Stir in diced tomatoes, scooped zucchini insides, Italian seasoning, salt, and pepper.
  6. Fill the zucchini halves with the turkey mixture.
  7. Top with mozzarella cheese.
  8. Place in a baking dish and bake for 25-30 minutes until zucchini is tender.
