Overview of the Recipe
This recipe involves marinating chicken thighs in a flavorful mixture, grilling them to perfection, and then serving with a delicious teriyaki glaze. The combination of soy sauce, brown sugar, pineapple juice, garlic, and ginger creates a rich and balanced flavor that will make this dish a favorite.
Ingredients
- 1 ½ lbs chicken thighs, boneless and skinless
- 1 cup soy sauce
- 1 cup brown sugar, packed
- 1 cup pineapple juice
- 4 cloves garlic, chopped
- 1 tablespoon fresh ginger, minced
Instructions
Prepare the Chicken:
- Prepare Chicken: Place the chicken thighs in a bowl or a gallon-sized Ziploc bag and set aside.
Make the Marinade:
- Mix Marinade: In a medium-sized mixing bowl, combine the soy sauce, brown sugar, pineapple juice, chopped garlic, and minced ginger. Stir until the brown sugar is fully dissolved.
Marinate the Chicken:
- Marinate: Pour the marinade over the chicken. Press the air out of the bag and seal tightly, or cover the bowl as air-tight as possible. Refrigerate overnight, or for at least 4 hours to allow the flavors to meld and the chicken to tenderize.
Heat the Marinade:
- Simmer Marinade: Remove the chicken from the marinade and set aside. Do NOT discard the marinade. In a medium saucepan, bring the marinade to a simmer over medium heat. Let it simmer for 5-10 minutes to kill any bacteria and to thicken slightly.
Grill the Chicken:
- Preheat Grill: Preheat your grill to medium-high heat.
- Grill Chicken: Place the chicken on the grill and brush some of the hot marinade over the top. Be careful not to place the brush back in the marinade after brushing the chicken to avoid contamination. Grill the chicken until it reaches an internal temperature of 165°F (75°C), turning occasionally and brushing with the marinade as it cooks.
Serve:
- Serve Chicken: Place the cooked chicken in a serving dish and pour the remaining hot teriyaki marinade over the top.
- Garnish and Serve: Serve immediately with your choice of sides.
