  • 2 cups cooked pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 avocado, diced
  • 1 cup shredded cheese
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup taco sauce

Instructions

  1. In a large skillet, brown the ground beef over medium heat until fully cooked.
  2. In a large bowl, combine cooked pasta, cherry tomatoes, black beans, corn, avocado, shredded cheese, onion, and cilantro.
  3. Add the cooked ground beef to the bowl and mix well.
  4. Drizzle taco sauce over the salad and toss to coat.
  5. Serve immediately or chill in the refrigerator for 30 minutes before serving.
