  • 2 pounds golden potatoes
  • 1 large onion
  • 4 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh thyme

Instructions

  1. Peel and cube the golden potatoes.
  2. Heat olive oil and 2 tablespoons of butter in a pan over medium heat.
  3. Add sliced onions and caramelize for about 15 minutes.
  4. In a separate pot, boil the potatoes until tender.
  5. Drain the potatoes and add them to the pan with onions.
  6. Add the remaining butter, salt, pepper, garlic powder, and thyme.
  7. Toss everything together and serve hot.
