  • 2 cups carrots, chopped
  • 2 cups potatoes, chopped
  • 1 cup onions, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the chuck roast with salt, pepper, thyme, and rosemary.
  3. In a large skillet, sear the roast on all sides over medium-high heat.
  4. Transfer the roast to a baking dish and surround it with carrots, potatoes, onions, and garlic.
  5. Pour the beef broth and Worcestershire sauce over the roast and vegetables.
  6. Cover tightly with foil and bake for 3-4 hours, until the meat is fork-tender.
  7. Remove from the oven, let rest for 10 minutes, then serve.
