Easy Crockpot Beef and Potatoes with Garlic Herb Butter Gravy

A comforting one-pot meal featuring tender beef and hearty potatoes, smothered in a rich garlic herb butter gravy.

Ingredients

  • 2 pounds beef chuck roast
  • 4 large russet potatoes, chopped
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 tablespoon Worcestershire sauce
  • 2 cups beef broth
  • 1 stick butter
  • Salt and pepper to taste

Instructions

  1. Place the beef chuck roast at the bottom of the crockpot.
  2. Add the chopped potatoes, diced onion, minced garlic, rosemary, thyme, and Worcestershire sauce over the beef.
  3. Pour the beef broth over the ingredients in the crockpot.
  4. Season with salt and pepper to taste.
  5. Cover and cook on low for 8 hours or until the beef is tender.
  6. In the last hour of cooking, add the stick of butter to make the gravy rich and flavorful.
  7. Once cooked, shred the beef and serve with the potatoes and gravy.

Notes

  • For extra flavor, sear the beef in a skillet before adding to the crockpot.
  • Leftovers can be reheated in the microwave or on the stovetop.
