Easy 4th of July Cheesecake Bars

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream
  • 1 cup fresh strawberries, sliced
  • 1/2 cup blueberries

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a greased 9×9 inch baking pan.
  3. In a large bowl, beat cream cheese, sugar, and vanilla until smooth.
  4. Add eggs, one at a time, mixing well after each. Stir in sour cream.
  5. Pour the cream cheese mixture over the crust and smooth with a spatula.
  6. Bake for 30-35 minutes or until the edges are set and the center is slightly jiggly.
  7. Remove from the oven and let cool completely. Refrigerate for at least 4 hours before serving.
  8. Top with sliced strawberries and blueberries before serving.

Notes

  • For best results, let the cheesecake bars chill overnight.
