Crockpot Taco Potatoes

  • 4 large russet potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn, drained
  • 1 onion, diced
  • 1 cup salsa
  • 1/4 cup sour cream (optional)

Instructions

  1. Start by browning the ground beef in a skillet.
  2. Once browned, mix in the taco seasoning with a bit of water as per package instructions.
  3. Wash and slice the potatoes into thin rounds.
  4. Layer half of the potatoes in the bottom of the crockpot.
  5. Add the beef mixture on top of the potatoes.
  6. Layer the remaining potatoes on top of the beef.
  7. Pour salsa over the potatoes and top with black beans, corn, and diced tomatoes.
  8. Cook on low for 6-8 hours or until potatoes are tender.
  9. Before serving, sprinkle with cheddar cheese and let it melt.
  10. Serve with sour cream on the side.
