- 4 large russet potatoes
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn, drained
- 1 onion, diced
- 1 cup salsa
- 1/4 cup sour cream (optional)
- Start by browning the ground beef in a skillet.
- Once browned, mix in the taco seasoning with a bit of water as per package instructions.
- Wash and slice the potatoes into thin rounds.
- Layer half of the potatoes in the bottom of the crockpot.
- Add the beef mixture on top of the potatoes.
- Layer the remaining potatoes on top of the beef.
- Pour salsa over the potatoes and top with black beans, corn, and diced tomatoes.
- Cook on low for 6-8 hours or until potatoes are tender.
- Before serving, sprinkle with cheddar cheese and let it melt.
- Serve with sour cream on the side.
