Crockpot Creamy Taco Potato Casserole

A delightful and creamy crockpot dish that combines the flavors of tacos with the comfort of potatoes.

  • 2 pounds potatoes, diced
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup corn, drained
  • 1 cup black beans, drained and rinsed
  • 1 cup cream of mushroom soup
  • 1 cup shredded cheese
  • 1/2 cup milk

Instructions

  1. In a skillet, brown the ground beef over medium heat and drain the fat.
  2. Add the taco seasoning and mix well.
  3. Layer the diced potatoes in the crockpot.
  4. Add the cooked beef, corn, black beans, cream of mushroom soup, and milk on top of the potatoes.
  5. Stir gently to combine all ingredients.
  6. Cover and cook on low for 6-8 hours or until the potatoes are tender.
  7. Before serving, sprinkle the shredded cheese on top and cover until melted.

  • For added flavor, top with fresh cilantro and diced tomatoes before serving.
