Crockpot Creamy Taco Potato Casserole

A deliciously creamy and hearty casserole that brings together the flavors of tacos and potatoes, all made conveniently in a crockpot.

  • 2 cups diced potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup cream cheese
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 can diced tomatoes with green chilies
  • 1/2 cup corn
  • 1/2 cup chopped onions
  • 1/4 cup fresh cilantro

Instructions

  1. Brown the ground beef in a skillet and drain any excess fat.
  2. In a crockpot, combine the potatoes, beef, taco seasoning, cream cheese, sour cream, diced tomatoes, corn, and onions.
  3. Mix well and cook on low for 6-8 hours or until the potatoes are tender.
  4. During the last 30 minutes, add the shredded cheddar cheese and cilantro, mixing until melted and combined.
