Crockpot Chicken Pot Pie Pasta

A hearty and comforting dish that combines the flavors of chicken pot pie with pasta, all cooked in a crockpot for convenience.

  • 1 pound boneless chicken breasts
  • 2 cups chicken broth
  • 1 cup frozen mixed vegetables
  • 12 ounces pasta (such as penne or rotini)
  • 1 can cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 tablespoon cornstarch
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • salt to taste
  • pepper to taste

Instructions

  1. Place chicken breasts in the crockpot and pour in chicken broth.
  2. Add frozen mixed vegetables, cream of chicken soup, garlic powder, onion powder, and thyme. Stir to combine.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. In the last 30 minutes of cooking, cook the pasta separately according to package instructions.
  5. In a small bowl, mix cornstarch with milk until smooth and add to the crockpot. Stir well.
  6. Add cooked pasta and cheese to the crockpot, stirring until the cheese is melted and everything is combined.
  7. Season with salt and pepper to taste. Serve warm.

Notes

  • For thicker sauce, use more cornstarch.
  • Feel free to add more vegetables as desired.
