Crockpot Cheesy Taco Potatoes

  • 4 large russet potatoes
  • 1 tablespoon taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 1/2 cup black beans, drained and rinsed

Instructions

  1. Prepare the potatoes by washing and slicing them into thin rounds.
  2. In a bowl, combine sour cream, taco seasoning, onions, tomatoes, and black beans.
  3. Layer half of the potato slices in the crockpot, followed by half of the sour cream mixture.
  4. Repeat the layers with the remaining potatoes and sour cream mixture.
  5. Sprinkle cheddar cheese on top.
  6. Cover and cook on low for 6-8 hours or until potatoes are tender.
