Crockpot Cheddar Ranch Chicken with Corn & Baby Potatoes

This dish combines the flavors of cheddar cheese and ranch seasoning with tender chicken, corn, and baby potatoes for a satisfying meal.

  • 2 pounds chicken breast
  • 1 packet ranch seasoning
  • 1 cup cheddar cheese, shredded
  • 2 cups corn, frozen or canned
  • 1.5 pounds baby potatoes, halved
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil

Instructions

  1. In a slow cooker, add the chicken breasts and sprinkle ranch seasoning over them.
  2. Add corn and halved baby potatoes to the pot.
  3. Pour chicken broth and olive oil over the ingredients.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Before serving, shred the chicken in the slow cooker and mix everything together.
  6. Sprinkle shredded cheddar cheese on top and let it melt.

Notes

  • For a creamy version, add cream cheese when serving.
  • Serve with a side salad for a complete meal.
