  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 3 cups broccoli florets
  • 1 cup baby carrots, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cheese tortellini
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream

Instructions

  1. In a crockpot, combine olive oil, onion, garlic, vegetable broth, broccoli, carrots, thyme, salt, and pepper.
  2. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  3. About 30 minutes before serving, stir in the tortellini.
