- 1 pound shrimp, peeled and deveined
- 1 pound crab meat, cooked
- 1/2 cup onion, diced
- 1/2 cup celery, diced
- 1/2 cup carrot, diced
- 4 cups seafood stock
- 1 cup heavy cream
- 1/4 cup sherry
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 teaspoon Old Bay seasoning
- Salt and pepper to taste
- Melt butter in a large pot over medium heat.
- Add onion, celery, and carrot; sauté until softened.
- Stir in garlic and Old Bay seasoning; cook for 1 minute.
- Add seafood stock and bring to a simmer.
- Add shrimp and cook until pink, about 3-4 minutes.
- Stir in crab meat and sherry; simmer for an additional 2 minutes.
- Reduce heat and stir in heavy cream; cook until heated through.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs if desired.
Notes
- This bisque can be made a day in advance and reheated gently.
- For a spicier kick, add a pinch of cayenne pepper.
