This dish is straightforward to prepare, taking around 30 minutes from start to finish, making it ideal for both busy weeknights and leisurely dinners.

History and Origin

Beef chops have been a staple in many cuisines around the world, known for their robust flavor and versatility. The addition of mushrooms and cream sauce to beef is a classic pairing, often found in French and Italian cooking. The creamy mushroom sauce adds a rich depth of flavor to the dish, complementing the beef perfectly and making it a favorite comfort food.

Ingredients

Beef Chops

2 lb beef loin chops, boneless (4 beef chops)
1 teaspoon Italian seasoning
¼ teaspoon salt
Black pepper, freshly coarsely ground
2 tablespoons flour (use 1-to-1 or measure-for-measure gluten-free flour to make it gluten-free)
2 tablespoons olive oil

Mushrooms

8 oz mushrooms, sliced (cremini used in this recipe)
1 tablespoon olive oil

Cream Sauce

1.5 cups heavy cream
5 cloves garlic, minced
½ teaspoon paprika
3 tablespoons fresh thyme

Instructions

Sear Beef Chops

Season the Beef Chops: In a large shallow bowl, season the beef chops with Italian seasoning, salt, and pepper. Sprinkle with 2 tablespoons of flour and dredge both sides of each beef chop in the flour.
Heat the Skillet: Heat an empty large, high-sided skillet (preferably cast-iron) over medium heat for 2 minutes to allow the skillet to heat through. Add 2 tablespoons of olive oil.
Sear the Beef Chops: Add beef chops to the skillet. Cook the beef chops on one side on medium heat for 5 minutes, without moving them, to sear.
Flip and Cook Through: Flip the beef chops over to the other side, reduce heat to low-medium, and cook for about 5 more minutes or until cooked through. The meat thermometer should register 145°F in the thickest part of the beef chop. Remove from heat and transfer the cooked beef to a plate.

Cook Mushrooms

Add Olive Oil: Add 1 tablespoon of olive oil on medium heat to the same cast-iron skillet.
Cook the Mushrooms: Add sliced mushrooms and sprinkle them generously with salt to taste. Let them cook for about 3 to 5 minutes, without moving them. The mushrooms will release juices; give them one more stir for 1 minute on low-medium heat.
Reserve Some Mushrooms: Remove ⅓ of the cooked mushrooms to a plate, leaving the remaining ⅔ in the skillet.

Make Cream Sauce

Add Cream Ingredients: Add heavy cream, minced garlic, and ½ teaspoon paprika to the skillet with mushrooms.
Simmer the Sauce: Bring everything to a boil, then reduce to low-medium heat. Cook for about 5 to 7 minutes on low-medium heat, with the sauce visibly simmering and bubbling (but not actively boiling) until the sauce acquires a nice color from the mushrooms and reduces a little bit. Remove from heat.
Stir in Thyme: Stir in half of the fresh thyme.

Assembly

Reheat Beef Chops: Add the beef chops back to the skillet and reheat on low heat for several minutes. Tip: For presentation purposes, do not spoon the sauce all over the beef chops. Do it sparingly so that they retain a golden brown seared look in some parts. Remove from heat.
Serve: When ready to serve, divide the beef chops and the sauce among the plates. Top with the reserved ⅓ of mushrooms (for presentation purposes) and the remaining fresh thyme. Season with salt and pepper, if needed.

Pairing and Serving Suggestions

Creamy mushroom beef chops pair beautifully with mashed potatoes, roasted vegetables, or a simple side salad. For a more indulgent meal, serve with a side of creamy polenta or garlic bread. This dish also pairs well with non-alcoholic beverages like sparkling water with lemon or a refreshing iced tea.

Variations of the Recipe

Vegetarian Version: Replace beef chops with thick slices of cauliflower or portobello mushrooms.
Spicy Twist: Add a pinch of red pepper flakes to the cream sauce for a spicy kick.
Herb Swap: Substitute fresh thyme with fresh rosemary or tarragon for a different herb flavor.

Health Benefits

Beef is a rich source of protein, iron, and vitamin B12, essential for muscle growth and energy. Mushrooms provide antioxidants, vitamins, and minerals, contributing to overall health. Using olive oil instead of butter for searing the beef and cooking the mushrooms adds healthy monounsaturated fats to the dish.

Notes

Ensure the beef chops are cooked to the proper internal temperature to avoid undercooked meat.
Fresh thyme can be substituted with dried thyme, but use less as dried herbs are more concentrated.
To make this dish gluten-free, use a gluten-free flour blend for dredging the beef chops.
